- For Roasted Red Peppers: Preheat oven to 400 degrees Fahrenheit. Place the oven rack on the highest level. Remove the stem, seeds and skin and quarter the bell pepper lengthwise.
- Place the peppers on a baking sheet lined with parchment paper. Keep the chopped chiles aside. Grill the peppers for 15 to 20 minutes or until the skin is dark in color. Remove the peppers from the oven when the skin turns slightly black. Let the chili cool completely. Remove the skin. Season with black pepper. I make additional roasted peppers and store in an airtight container in the fridge. Lasts up to a week.
- Cut the avocado in half. Using a sharp knife, slice the avocado lengthwise until you see the knife touch the pit. Remove decorations. Take the meat and cut it. Add a few drops of fresh lemon juice to the avocado and season with salt. If you want, you can mash the avocado.
- Spread a tablespoon of cottage cheese on each rice cake.
